Chicken Pot Pie

My name is Coach Annalisa. I coach competitive figure skating and I love to cook healthy and hearty meals.

Ingredients

  • 2 Trader Joe's Frozen Pie Crusts

  • 1.5 lbs. Chicken Thigh boneless (skin okay)

  • 1 Qt Chicken Broth

  • 1/2 Tsp Salt & Pepper (to taste)

  • 1 Tsp of Parsley, Dill, Thyme, Rosemary

  • 1tsp Trader Joe's Citrus Garlic Seasoning

  • 1/2 Lemon

  • 2 TBS Butter

  • 1/3 Cup Flour

Preparation

Step 1


First preheat oven to 400 degrees and thaw pie crusts. Season the chicken with salt, pepper, and citrus garlic seasoning. Cook both sides 3-4 minutes until crisp/well cooked.


Step 2


At the same time sautee onions, celery, carrots in butter until soft and golden adding dill, thyme, rosemary


Step 3


Add 1 Qt of chicken broth to vegetables, add chicken back into pot, and squeeze 1/2 lemon into and mix.


Step 4


Now stir 1/3 cup of flour and whisk until slightly thick roux (feel free to add 2 tbsp of milk).


Step 5


Put pie crusts in 9' pie pan. Pour the pot pie ingredients into the dough and cover with second pie crust.
